letil soup
250g of red lentils
1 onion
1 potato
fresh parsley
1 carrot
water
stockcube
paprika
Pan fry onion until soft
Add lentil washed and the required amount of water with the sufficient stockcubes {or fresh stock}
grate the carrot and peeled potato into the mixture
add paprika and chopped parsley
Bring to the boil and then simmer until lentils are cooked, approx 30 mins
once cooled slightly use a hand blender to smooth the mixture
This is a versatile soup, you can add any veg you want or seasoning (i dont add salt to food)
Because you blend it kids wont realise what's in it so you can slip the foods in they are not to keen on
for a kick for the adults add a dash of tabassco to your serving YUMMY!
