mushrooms and crispy bacon hash
serves 4.
4 large baking potatoes.
125 g (5 oz) bacon
250 g (9 oz)button mushrooms
1 tsp reduced fat marg.
1 can kidney beans
50 g (2 oz)reduced fat greated cheese.
wrap potatoes in tin foil and bake in a pre heated oven (200 c,400 f,gas mark 6)for about 50 to 60 mins. cut the bacon into strips and the button mushrooms in to slices. heat the marg,fry the bacon strips and remove.add mushroom slices to the pan and saute. drain the beans.
when potatoes are cooked ,cut them open and scoop out the flesh,reserving the skins.mix the potato flesh with the mushrooms and beans. season if required with salt and pepper.sprinkle the potato with greated cheese until melted.arrange the bacon strips on top and serve.
